My new family ritual is to make meals ahead to help me during the week. We pick five meals on Sunday and spend the afternoon cooking. Today's meal was Homemade Spicy Tortilla Soup. Per our Facebook friend's request here is the recipe we used.
Makes 4 servings
Serving size is about 2 cups
Prep Time (Start to Finish) 35 minutes\
Calories per serving: 229
Oil Spray
2 med. red and/or green sweet peppers, cut into thin bite-size strips
1 med. onion, chopped
3 cloves garlic, minced, or 1.5 teaspoons jarred minced garlic
.5 teaspoons ground cumin
3.5 cups reduced-sodium chicken broth
1 cup water
1 - 2 teaspoons finely chopped canned chipotle pepper in adobo sauce
1 14.5 oz. can no-salt diced tomatoes
8 oz. cooked skinless chicken breast, shredded (about 2 cups) Kosher salt and freshly ground black pepper (optional)
1/4 cup light sour cream
3 tbsp chopped fresh cilantro
1 oz. baked tortilla chips, crushed (.5 cup)
1 lime, cut into 4 wedges
1. Coat a 4 qrt pot with oil spray. Heat the pan over med. heat. Add the sweet peppers and onion. Cook for 8 mins. or until veggies are crisp-tender, stirring occasionally. Add garlic and cumin. Cook and stir for 1 min.
2. Add chicken broth, water, and chipotle pepper. Bring to boiling. Reduce heat and simmer, covered, for 5 mins. Stir in tomatoes and chicken. Cover and cook for 5 mins. more. Season to taste with kosher salt and black pepper (skip the salt if you have high blood pressure).
3. In a small bowl combine sour cream and 2 tbsp of the cilantro. To serve, divide soup among four serving bowls. Top each serving with one-fourth of the sour cream mixture and sprinkle with one-fourth of the crushed chips. Sprinkle with remaining cilantro and serve with lime wedges to squeeze over the soup.
Tortilla Chip Recipe:
Take tortilla's and cut into strips. Place on oven pan and brush on melted butter. Put oven pan in oven on broil for 3 mins or until golden brown.
ENJOY!

Beauty and Fashion Breakdown at White House Correspondents Dinner 2012
Claire Danes Photo: Allison Shelley |
Oh what a night! The White House Correspondents Dinner included guests like Kim Kardashian, Rosario Dawson, Lindsay Lohan, Ginnifer Goodwin, Zooey Deschanel just to name a few. This was definitely a who's who of DC. I attended the after party hosted by Claire Danes and Capitol File Magazine held at the DC Newseum located on 555 Pennsylvania Ave. It was definitely a night that people will talk about for a while I am sure. We couldn't help but notice the fashion and beauty statements made by our lovely female celebrity guests. Seemed as though red lips and creme colored gowns were the number one picks of the evening. We received requests over the past few days asking for our GET THE LOOK breakdown on beauty.
Well make-up fans, get your brushes and cosmetics ready! You will be surprised how carefree this look is.
GET THE LOOK using INK Cosmetics
1. Start with a clean face, moisturize and apply Face Primer.
2. Dab on a little Shadow Primer on the lid.
3. Using Bambi Shadow Trio add the lightest color all over the lid. Then smoke out the outer
corners with the medium shade. Line the eyes for a subtle look with a small smudge brush and use the
darker brown tone from the trio. Add the color in the outer corner and sweep up towards the crease.
4. Clean any fallen shadow under the eye with a make-up removing pad.
5. Now apply your concealer and foundation. We use our Concealer Duo and Foundation
Stick. Trick is to keep it light. Cover only where you need it.
6. Set foundation with Oil Control Powder.
7. Line outer lips with Bright Eyes Pencil to keep the lip line crisp.
8. Line you lips with Burgundy Lip Liner. Make sure the pencil is sharp for perfect line.
9. Apply Classic Red Lipstick with a lip brush.
10. Finish look with Jet Black Mascara and peachy blush like Captive Glow.
